Roasted Butternut Squash Salad with Hazelnuts & Manchego and Cauliflower Soup
- This turned out to be a much heartier and filling meal than I imagined. When making the dressing for the salad, I sliced the shallots making them easy to remove (not an onion fan). They still flavored the dressing but you're not biting into shallot.
Chorizo, Poblano and yam Fajitas with Guacamole...and maybe El Salvadoran Pineapple-Pickled Cabbage
- Well, we skipped the guacamole- one of the avocados was bad- but sliced avocado was a great addition to the fajitas. The pineapple-pickled cabbage was a hit; we liked it both on top of the fajitas as well
Pork Schnitzle with Greens, Spaetzle and Lemon Brown Butter
- This was incredibly good- I added nutmeg to the brown butter sauce which really brought all the flavors together. I also used a box of spaetzle instead of making my own. I had collards on hand so I threw those in with the mustard greens- probably wouldn't recommend doing that. Even though I cooked the collards before adding the mustard greens, this just wasn't a great way to cook these- need to be braised to avoid being tough/chewy.
- YES to the green onion pancakes- those are genius. These are like savory elephant ears- fried, crispy, sesame-oil and salty delicious little bites. Definitely can't make them frequently as they're fried and probably not wonderful for your health, btu they're soooo good. These are best eaten right away, but I did have some success duplicating that flavor the next day by popping one into the toaster...mmmm.
this was good but not something I'll make on a regular basis- good use of cabbage,
though. And surprisingly, reheating leftovers in the microwave was just fine; flavors and
textures were still good.
